| This is an
appetizer that could be served over pasta as a main dish

| Ingredients |
| 40-48
raw shrimp, shelled & deveined |
| 3 teaspoons Old Bay Seasoning |
| 2 teaspoons black pepper, freshly ground |
| 2 tablespoons canola or other flavorless oil |
| 1 tablespoon olive oil |
| Garlic Butter (see recipe below) |
| 1 tablespoon Cognac or Brandy |

| 1/4 pound salted butter |
| 1/4 teaspoon cayenne pepper |
| 1 teaspoon black pepper, freshly ground |
| 6 cloves garlic, chopped |
| 1 bunch fresh parsley, finely chopped |

Directions |
Season shrimp in Old Bay
and pepper. Put a thick-bottomed pan on high heat; when hot, add both oils.
When they start to smoke, add the shrimp and sauté. When shrimp are pink outside, with centers still uncooked
(20-30 seconds), add Garlic Butter from recipe
below. Sauté until shrimp are done, then stir in cognac or brandy.
Serve immediately with thick slices of French bread. |
