Charlie's Easy BBQ'd Fish
A favorite of the boaters rafting up at Pelican Bay from Charlie "Andy" Anderson
 
Ingredients
2 pounds fresh grouper or snapper
1/2 potato sliced
1/2 carrot cut in pieces
1/4 fresh onion
1/4 teaspoon salt
2 tablespoons butter or 1 tablespoon olive oil
your favorite spices
 
Directions

Cut fish into small serving pieces, divide equally onto 6 large pieces of aluminum foil.
Add everything else (butter or oil last) and any additional spices you like - we love hot sauce.
Fold fold foil packets tightly so they seal.

Place packets on heated grill and cover.
Cook for approximately 30 minutes, turning at least once.
