Ants Climbing up a Tree

This great Chinese dish really doesn't have ants in it.

 
Ingredients
2 ounces chopped or ground pork
2 packages Bean Threads (Chinese grocery store)
Mixture 1
2 scallions, thinly sliced
2 teaspoons ginger root, minced
1 teaspoon garlic, chopped
1/2 tablespoons hot bean paste (la do ban jiang)
1 pound grouper, cut into long pieces (fingers)
Mixture 2
2 tablespoons light soy sauce
1 teaspoon sugar
1 teaspoon cornstarch
2 cups stock (chicken, beef, or vegetable)
 
Directions
1: Soften bean threads in warm water and drain.

2: Heat pan and 4 Tablespoons olive oil, stir fry pork for two minutes and add Mixture 1; stir fry until fragrant and add bean threads and Mixture 2; cover and simmer over low heat for about 8 minutes; remove to serving plate and serve.

Garnish with coriander or green onion tops (cut into 1 inch lengths)
